I finally found an amazing recipe for vegan pancakes! This comes from Merle O'Neal on the Tasty website and I am so glad I found it. These pancakes are light, fluffy and so easy to make.

Instructions
Step 1
In a medium bowl, add the flour, baking powder and salt; stir to combine.

Using a separate bowl, add non-dairy milk, apple cider vinegar and vanilla, maple syrup; stir to combine.
Step 3
Pour the liquid mixture into the dry mixture and whisk until smooth.
Step 4
Let batter rest for 20 minutes
Step 5
Pour about a 1/2 cup of batter at a time onto your pan over medium heat, flipping your pancake when the top begins to bubble. Repeat with remaining batter.
Step 6
Serve warm with maple syrup.
