Step 1
Heat oven to 180 degrees centigrade. Put oil and bacon into a casserole dish and fry for 2 mins. Add the leeks and cook until soft, but not coloured, 4 to 5 mins. Tip in rice and cook for 1 minute more. Pour over stock, cover and place in the oven for 20 mins. Stirring half way through cooking.
Step 2
When the rice is just tender and all the liquid has been absorbed, stir in the peas. Place back in the oven for 2 minutes more. Remove and stir in the cheese, add zest and season.
