Meatballs
2eggs

1 lbground beef
1 lbmild italian sausage
1 tspsalt
½ tspblack pepper
½ tspgarlic powder
½ cupplain Breadcrumbs
½ cupPecorino Romano Cheese
grated, or Parmesan
½ cupfresh parsley
chopped
Oil
for Frying, along with
2cloves Garlic
½ cupOnions
Sauce
3 Tbspolive oil
½ cupYellow Onion
chopped
2garlic cloves
minced
2 qtsTomato Puree
use fresh summer or San Marzano Tomatos pureed in a blender
1 tspsalt
½ tspblack pepper
¼ cupfresh basil leaves
Pasta
Instructions
Step 1
Heat a large pot over medium heat and add 3 Tbsp olive oil, 1/2 cup yellow onion, and 2 minced garlic cloves. Saute the onion and garlic until darkened and fragrant.
Step 2
Add the tomato puree, salt, pepper. Chop basil leaves and add to pot. Heat the sauce over medium heat until simmering, then reduce heat to simmer. This sauce will need to simmer for at least 40 minutes, so we can do the meatballs while we wait. The sauce may simmer for up to 4 hours.
Step 3
Combine all ingredients for the meatballs and mix with your hands or a stand mixer. Form into 1 1/2 inch meatballs and set aside
Step 4
If simmering the sauce for longer than 40 minutes (up to 4 hours), you can set the meatballs in the refrigerator. The meatballs may fall apart if they sit in the sauce for longer than 1 hour. Place meatballs in a baking dish and bake at 400 degrees F for 20 minutes. When they are cooked, add the meatballs to the sauce and let them stew for at least 20 minutes.
Step 5
Serve over noodles. Bronze-cut pasta will allow the sauce to stick to the pasta better, and spaghetti will be the best pasta to hold onto any tomato chunks for basil in the sauce.
