Step 1
Preheat the oven to 180'C/Gas mark 4 Boil the potatoes until soft
Step 2
Mash with the knob of butter and enough milk to make stiff but smooth mash
Step 3
Meanwhile brown the sausages lightly in a pan to give them some colour (optional)
Step 4
Cut each of the sausages in half width ways and arrange to cover the bottom of a large casserole dish
Step 5
Lay a layer of apples over the sausages then a layer of onion followed by apple, then onion until it is all used up
Step 6
Pour in enough stock to cover the sausages
Step 7
Put the potato on top in an even layer
Step 8
Put the caserole in the oven for 30-45 minutes until the top is golden brown
Step 9
Serve on its own or with more veg as accompaniment, if you want it to go further
