Instructions
Step 1
Roast butternut squash in over at 350Β° for 30-45 minutes (Halved and gutted)
Step 2
Cube tofu
Step 3
Bring oil to a shimmer in a large skillet
Step 4
Toss in cubed tofu and season with garlic, paprika, salt and pepper. Bring to a nicely toasted texture.
Step 5
Once tofu is done, set aside
Step 6
Bring pasta water to a boil, season with additional salt.
Step 7
Cook pasta until al dente
Step 8
Once butternut squash is done. Cool to the touch. Then scoop out flesh.
Step 9
Add butternut squash to blender with cheddar cheese starchy cooking water. Season with salt and pepper to taste.
Step 10
Toss pasta (drained), tofu, and sauce into a large pot. Serve!
