2 tablespoonsunsalted butter

3 poundsground beef
1 cupbread crumbs
½ cupmilk
2 packetsonion soup mix
½ cupketchup
3 tablespoonsworcestershire sauce
2eggs
1 teaspoonsalt
1 teaspoonoregano
1 teaspoonblack pepper
½ teaspooncayenne pepper

Instructions
Step 1
1. Put a pan on high heat, add in the butter and wait until the butter melts, then add in the veggies (chop the veggies by hand really fine or use a food processor like I did) onions, celery, carrots and garlic sprinkle with 1/4 teaspoon of salt and sauté for about 3 to 4 minutes then set it aside.
Step 2
2. In a large bowl add in the ground beef the sautéed vegetables, breadcrumbs, milk, the packets of onion soup mix, ketchup, Worcestershire sauce, eggs and the seasonings. Mix until well combined.
Step 3
3. Transfer the meat mixture on to a baking tray lined with parchment paper and form it into a log shape.
Step 4
4. Next make the sauce by mixing together the ketchup, brown sugar, Worcestershire sauce and BBQ sauce really well. Spread the sauce over the meatloaf until it’s all covered.
Step 5
5. Put the meatloaf in a preheated 375° oven for about 55 to 60 minutes, once it comes out of the oven let it rest for 10 minutes before slicing into it. Serve it with some mashed potatoes and a side of veggies of your choice.
