Ingredients

1 tablespoonbutter

1onion
sliced

4cloves garlic
minced

2 teaspoonsfresh ginger
minced

1 ½ tablespoonsyellow curry powder

1jalapeno pepper
seeded and minced

14 ouncesdiced tomatoes

2 x 30 ounceschickpeas cans
drained and rinsed

1green bell pepper
or red, sliced

15 ozcoconut milk can

15 ozcan of crushed tomatoes

30 ozchickpeas cans
drained and rinsed

fresh cilantro
roughly chopped, for serving

4 cupswhite rice
cooked, for serving
Instructions
Step 1
Cook onion in butter in a large saucepan until it begins to soften, about 3-4 minutes. Add garlic, ginger and curry powder. Cook just until fragrant, about 1 minute.
Step 2
Stir in bell pepper and jalapeño. Continue to cook over medium heat until tender-crisp.
Step 3
Add remaining ingredients and simmer uncovered about 15 minutes or until thickened.
Step 4
Serve over rice with cilantro.
