Ingredients

1 Tbspolive oil
2cloves garlic

1carrots
lg, thinly sliced
1celery stalk

0.5 Tbspfresh ginger
grated
½ tspdried ground turmeric
3 cupschicken broth
0.5 lbboneless skinless chicken
½ tspfresh thyme
1bay leaf

½ cuppearl couscous
Fresh parsley
finely chopped, for serving

Instructions
Step 1
In a pot or Dutch oven over med.-high heat olive oil; add onion, carrots, celery, & garlic; cook until onion becomes translucent (5 min.)
Step 2
Stir in grated ginger & turmeric and cook (30 sec.)
Step 3
Add chicken broth, chicken, thyme, & bay leaf. Bring to boil, stir in couscous, & push chicken down to submerge in broth.
Step 4
Reduce heat to med.-low; simmer (20-25 min.) until chicken is cooked through.
Step 5
Remove chicken, shred with two forks, & return to pot. Season to taste with salt & pepper (add more broth as needed.) Serve with fresh parsley & enjoy!
