Instructions
Step 1
Boil a kettle. Heat a wide based pan with olive oil and add the diced chicken with a generous pinch of salt & pepper. Cook until browned.
Step 2
Meanwhile, add the pasta to a pot with plenty of boiled water. Cook for 3 minutes. Once done reserve a cup of the starchy pasta water.
Step 3
Add the roasted garlic paste, tomato paste, cherry tomatoes and oregano to the chicken. Cook for a further 2 minutes or so.
Step 4
Add 200ml of the reserved starchy water to the pan and crumble in the chicken stock cube.
Step 5
Add the pasta to the chicken and stir to combine.
Step 6
Once the chicken is cooked, tear the mozzarella into bite size pieces. Add half of this to the pan.
Step 7
Strip the basil leaves from their stalks and tear them roughly. Top the fusili with the leaves and remaining mozzarella.

If you seen my reviews; its that my KIDS are about as picky as they come. One hates pasta, one lactose intolerant, one hates the texture of chicken, one doesn't like tomatoes.
Great Recipe; everything is chunky enough to pick out. Would save the mozzarella for a table finish, maybe some black olives and definitely need to sauté the chicken in some garlic and onion.
