Instructions

Sauté onions & garlic

Step 1
In a large saucepan over medium heat, cook onions and garlic over medium heat 3 to 4 minutes, stirring occasionally and adding vegetable broth 1 to 2 tablespoons at a time, as needed to prevent sticking.

Make lentils

Step 2
Add remaining vegetable broth, 1/2 cup water, potatoes, lentils, tomatoes with their juices, berbere and salt to saucepan. Increase heat to medium-high. Bring to boiling. Reduce heat to medium.

Simmer, covered, until potatoes and lentils are tender, 25 to 30 minutes.
