Double Chocolate Blender Muffins (Gluten-free)

Step 1
Preheat oven to 350 degrees

Line a 12 count muffin tin with paper liners, and lightly spray with cooking spray
Step 3
To a blender, add applesauce, sour cream, eggs, vanilla, sugar, cocoa, oats, baking soda, salt and baking powder. Blend on high until well blended – 60to 90seconds or so, scraping down the sides as needed.
Step 4
Remove blender from base and stir in the chocolate chips. Pour the batter evenly into the muffin cups about 3/4 full. Sprinkle a few chocolate chips on the top of each muffin.
Step 5
Bake for 15 to 18 minutes until the muffins spring back when touched. Don’t over bake. Remove from oven to cooling rack, and let muffins remain in pan for 2-3 minutes before removing.
