Ingredients

250gConchiglie pasta
2 tablespoonoil
1 tablespoonbutter
3garlic cloves
minced
1red onion
small, chopped
1 teaspoonsalt
or to taste
½ teaspoonchilli powder
1 teaspoonpaprika
½ teaspoongaram masala
1 teaspooncumin powder
1 teaspoonsugar
2 tablespoontomato purée
1 ½ cuppasta water
1 teaspoondry fenugreek leaves
½ cupdouble cream
2 knobsbutter

Instructions
Step 1
Boil the pasta with half teaspoon salt. To make the sauce, heat a pan then add oil. Once hot add the butter.
Step 2
Once butter has melted add the onions, saute for a couple of minutes until translucent then add the garlic. It should be ok medium heat.
Step 3
Once onions have turned golden brown add the spices - salt, chilli powder, paprika, garam masala, cumin powder, sugar
Step 4
Mix it together and then add a splash of water to help cook the spices. Have it on low heat at this stage.
Step 5
After another minute add the tomato puree, mix it together and cook for a couple of minutes until oil has separated.
Step 6
Then add the pasta water. Cook this on medium heat for 5 mins then add the kasuri methi.
Step 7
Stir this in and after 2 mins add the double cream.
Step 8
You don't need to cook this for too long, you just want to ensure the cream has mixed in. Add butter towards the end.
Step 9
Add the pasta which should be boiled to al dente. Follow the instructions for your pasta.
Step 10
Mix this in and cook for around 2-3 mins until pasta has mixed in and absorbed the flavours.
Step 11
Finish with fresh coriander and serve.
