Ingredients

1 cupbroccoli
chopped, florets and stems
1 cupcauliflower
chopped, florets and stems
¼ cuponion
diced
1egg
large
¼ cupwhole-wheat bread crumbs
¼ cupcrumbled feta cheese
½ teaspoonsalt
¼ teaspoonfreshly ground black pepper
Instructions
Step 1
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Step 2
In a food processor, combine the broccoli, cauliflower, and onion, and pulse until chopped well but still slightly chunky. Or if you don’t have a food processor, chop everything on a large cutting board until you have very small pieces. Transfer to a large mixing bowl.
Step 3
Add the egg, bread crumbs, cheese, salt, and pepper.
Step 4
Using your hands, shape small balls, a little smaller than a tablespoon, and carefully place them on the prepared baking sheet.
Step 5
Bake for 10 minutes, flip carefully, and continue to bake for 10 additional minutes until browned and crisp.
Step 6
Technique tip: Save time on shaping the tots by spraying a mini muffin tin with nonstick cooking spray and lightly pressing the mixture into the cups, then baking as directed.
