Base
Caramel
1 tablespoonlemon juice
¼ cupcoconut oil
¼ cupCashew caramel spread
2 cupsdates
1 cupcashews
¼ teaspoonsalt
½ teaspoonvanilla extract
Chocolate
Instructions
Base
Step 1
Process the almonds and oats into an almond meal consistency. Add the dates and process until the mixture starts to come away from the edges of your food processor. Add filtered water if required.
Step 2
Press into 18x18 inch baking tin. Place in fridge.
Caramel
Step 3
Add all ingredients to a blender and blend until smooth and thick.
Step 4
Spread over the base and place in fridge.
Chocolate
Step 5
In a medium bowl over a low stove heat (double boiler), melt the coconut oil. Add in agave and cacao and mix until smooth.
Step 6
Slowly add pieces of chocolate, mixing until combined before adding more.
Step 7
Take off heat and let cool slightly. Add the coconut and mix through.
Step 8
Pour over the caramel layer and return to fridge to let it set for at least 4 hours.
Step 9
Once set, cut into slices using a sharp, warm knife.
