Ingredients
8 servings

1 Tbspcoconut oil
+ 1 tsp, divided

14 ozandouille sausage
1 pack Johnsonville New Orleans Andouille Smoked Sausage

0.5onion
chopped

1green pepper
chopped

4 stalkscelery
chopped

1 tspCajun seasoning
+ 1/8 tsp, divided

1bay leaf
1can El Pato

1can tomato sauce
small

1 cupchicken broth

¾ cupwater

1 packriced cauliflower

cayenne pepper

12 ozraw shrimp
small, peeled and deveined
Instructions
Step 1
In a large skillet, heat 1 tbsp coconut oil, sausage, onion, peppers, and celery. Saute for around 5 minutes, then add the seasoning and bay leaf. Cook for 1 minute more. Add the el pato, tomato sauce, chicken broth, water, and cauliflower rice. Bring to a boil, then cover, reduce heat to medium low, and simmer for 20 minutes. Remove the bay leaf.
Step 2
In another skillet, saute shrimp in 1 tsp coconut oil, Cajun seasoning, and a dash of cayenne pepper in tsp of oil. Saute for 2 minutes, then stir into the jambalaya.
