Katarina's Chocolate Chip Cookies (Baked Cookies)

These cookies are moist and soft with slightly crispy edges... just the way a perfect chocolate chip cookie should be! This recipe comes from my dear friend, Katarina, who owns and runs Cult Cafe in the old city of Valencia, Spain. If you are ever in Valencia, do yourself a favor and stop by for THE BEST coffee in the city, some amazing breakfasty and brunchy foods, really great bakery items, and a warm, friendly smile from a staff who truly cares. This recipe is similar to traditional Nestlé Tollhouse Chocolate Chip cookies, but it makes a smaller batch.
