2 tspEVOO

1 tspBBQ sauce
I used

1 tspWorcestershire Sauce

1 tspMaple Syrup

1 tspBBQ Spice mix

1 tspbutter

1Everything Bagel
toasted

1 TbsAioli

2 leavescos lettuce

1slice vegan Cheddar cheese

1 slicestomato

1 TbsCaramelised Onion

1 TbsDijon Mustard

Instructions
Step 1

1. Heat the grill, drizzle with oil. Place the Lions Mane on the grill, drizzle with EVOO, BBQ & Worcestershire sauce, sprinkle with 1tsp of BBQ spice mix, & drizzle with a little more oil. Press down the top Sandwich plate or a weight to compress, let the mushroom sear & caramelise. Turn & top with butter and press again until golden & moisture has evaporated









Step 2

2. Place thé cheddar slice on the mushroom, sprinkle with a little water, cover with a small frypan to steam & melt the cheese.


Step 3

3. Spread the aioli in the bottom bagel, top with lettuce, the Lions Mane, drizzle with BBQ sauce. Then top with tomato & caramelised onion. Spread the mustard on the top bagel & place on top.
