EASY VEGAN GARLIC ALFREDO πŸ˜πŸ’š by One of my new favorite pasta sauces! πŸ‘Œ β€’β€’ I've tested some different vegan alfredo sauces recently and this was by far the best... So creamy and rich in flavor! 🀀 Did you know that garlic is the vegetable with the most antioxidants? To make this meal even healthier you can use whole grain pasta (I only used white pasta because I thought it looks better in the video πŸ˜‰), blend some cauliflower into the sauce or add some chickpeas and vegetables. β € The recipe for the vegan parmesan is also coming in the next few days! πŸ˜‹ β € RECIPE 1 small onion 4 cloves garlic 2/3 cup (85g) cashews 1/4 cup pasta water 1 1/2 cups unsweetened plant milk 2-4 tbsp nutritional yeast 1 tbsp lemon juice salt and pepper to taste (yes, I forgot the pepper πŸ€·β€β™‚οΈ) optional additions: cauliflower fresh herbs chickpeas more vegetables vegan parmesan β € ❢ Optional: Soak cashews in hot water. (Not necessary, if you have a highspeed blender) ❷ Cook your pasta. Save 1/4 cup of the water for the sauce. ❸ SautΓ© onion in a pan. After 3-5 minutes add the garlic. You can also roast the garlic in the oven for about 40 minutes, but I found it less time consuming this way. ❹ Add all ingredients to a blender and blend until the sauce is perfectly smooth. ❺ Mix sauce with pasta in a pot. You can return the pot to the stove and heat it up or just eat it rightaway. ❻ Serve with your optional additions of choice and enjoy!
