Instructions
Step 1
Dice onion into large pieces add 1/2 to bottom of crockpot
Step 2
Season 1/2 of the roast with 1/2 garlic pepper, garlic salt, salt and then coat in flour.
Step 3
Turn roast over and season the other 1/2 with the rest of seasonings and coat will flour.
Step 4
In a large skillet drizzle olive oil. Once oil is heated put roast in (flour side down) and sear the roast. Flip over once brown and sear the other side. Both sides should be nice and brown with almost a “crust”
Step 5
Once seared put roast into crockpot. Put in 1/2 cup of water, and add beef broth in to cover the bottom of the crockpot and come up to half up the roast.
Step 6
Add the rest of the onions to the crockpot and cover.
Step 7
Set crockpot on low for 8 hours or high for about 4 1/2 or until tender.
Step 8
About 2 hours prior to the roast being ready prep the carrots and put into crockpot to cook the rest of the time.
