Lebanese Lentil Soup

Instructions

Step 1
1. Rinse and drain the red lentils and set aside. Peel the russet potatoes and chop into small cubes.

2. Finely chop the carrot, onion, and garlic. Dice the tomato

3. Use a kettle and bring 4 cups of water to boil
Step 4
4. Heat up a stock pot to medium-low heat. Heat chili olive oil, add cumin seeds, and let infuse for 1 min
Step 5
Add the onions and salt and saute 2-3. Add tomato and saute 3 mins. Add garlic and saute for 1 min
Step 6
5. Stir in lentils and combine. Saute for 2 mins
Step 7
6.Pour in boiling water a bring to boil
Step 8
7. Add the potatoes and carrots and bring to simmer
Step 9
8. Bring the soup to a boil, then cover and cook on low for 20min, until lentils begin to dissolve
Step 10
10. Plate the soup and garnish with fresh lemon juice, chopped parsley, a drizzle of olive oil, a sprinkle of zaa’tar, and fresh cracked pepper to taste
Step 11
Also nice with a piece of rye toast
