Lentil and sweet potato curry
Tender sweet potato and creamy lentils make this hearty dish a soup or a stew. Kefir lime leaves and lemongrass give the dish floral notes. It’s so good 😊

Ingredients

2 Tvegetable oil
0.5 Cwhite onion
chopped
3garlic cloves
1 Tginger
peeled and roughly chopped
1 stemLemongrass
outer leaves removed, chopped
1 Tcurry powder
4 keffirlime leaves
1 Cred lentils
4 Cchicken stock
or vegetable
1 x 14 ozcan coconut milk
2 tbtomato paste
1 Csweet potato
peeled and cut in 1/4 ‘ cubes
2 tsalt
5 ozbaby spinach

Instructions
Step 1
Heat your favourite soup pot over medium-high heat
Step 2
Add vegetable oil. Add onions and cook until translucent
Step 3
Roughly chop peeled ginger, garlic and lemongrass. Purée in a food processor. Add to pan with onions
Step 4
Add diced sweet potatoes, curry powder, salt and kefir lime leaves. Stir to combine then add lentils and tomato paste. Stir to coat with aromatics
Step 5
Add in can of coconut milk to combine then add stock of choice, either vegetable or chicken (water works as well!)
Step 6
One last stir then bring mixture to a boil, reduce to simmer and cook approximately 1 hour until thick and creamy.
Step 7
Add spinach just before serving, it will wilt right down
Step 8
I love to serve mine with a dollop of plain yogurt and cilantro
