Step 1
Whip yolks with half of sugar until thick and glossy. Whip cream with remaining sugar until soft peaks. Whip in mascarpone until stiff peaks. Mix with yolk mixture. Put in piping bag with a large round tip. Set aside
Step 2
Soak lady fingers in coffee and cut in half. Line 6 halves in a ramekin vertically, should be a tight fit. Dust cocoa powder on bottom. Fill with mascarpone cream. Top with cocoa powder. Chill for up to 10 days or freeze. makes 4
