Step 1
Fill big pot with water. Cook all in ingredients together, except smoked sausage. Stir once in a while. When it boils, simmer until only one bubble bubbles, for about 3 - 3 1/2 hrs. ( until peas look creamy and ham hock is tender)
Step 2
Cook smoked sausage in soup last 20 minutes.
