defrosted
1onion
medium sized, chopped chunkily
1tomato
chopped of tomatoes, I've been using the fire roasted ones at Dillons
1can corn
3 ½ cupschicken broth
or enough to cover/ how soupy you wa
1 x 8 ozcream cheese
package, cubed
1 cupcheddar cheese
shredded
½ Tbsppaprika
to taste
2 tspcumin
also to taste
½ tspred cayenne pepper
to taste
pepper
to taste
salt
pepper
to taste

2 tspgarlic
Instructions
Step 1
Put onion, tomato, and corn into crockpot
Step 2
Place defrosted chicken on top
Step 3
Season soup
Step 4
Pour in broth (can add tomato paste if using real tomatoes)
Step 5
Stir mixture so that spices are evenly distributed.
Step 6
Put in cheddar cheese and place cream cheese.
Step 7
Set on low for 6-7 hours or high for 3-4 hours.
Step 8
15-30 minutes before serving take chicken out of the crockpot and shred on a plate with 2 forks (it should be very tender at this point).
Step 9
Place shredded chicken back in, mix and serve with chips and jalapenos.
