Pasta with Creamy Peas (Pasta e Piselli)

Pasta with Creamy Peas or as we like to call it in my family, Pasta Piselli. This dish is prepared without any meat or eggs. Cheese is optional but not necessary. This simplified healthy version of a traditional Italian classic is creamy, rich and delicious. A healthy alternative with all the flavour you want from this dish. You’re going to love it.

Instructions

Step 1
Boil a pot of salted water. Once boiled. Set aside on low.
Step 2
Peel and chop large white onion and garlic. Sauté until translucent and fragrant. Season with salt and pepper.
Step 3
Add peas to onions and garlic. I prefer fresh peas or de thawed frozen. Mix well. Season with salt and pepper. Add a little olive oil if necessary. Sauté for a few mins until peas are almost cooked.
Step 4
Add a few ladles of salted water you boiled previously until peas are covered. Cook covered for a few minutes
Step 5
Bring to a light boil.
Step 6
Remove half the peas and onions from pan and blend in a food processor until nice and creamy. Add a splash of fresh lemon juice. Add a little boiled water if consistency is to thick. We want them to be creamy.
Step 7
Return the creamed peas to the pan and mix well to incorporate the creamy rich pea sauce and the remaining peas set aside in pan. Now, add boiled salt water (from the pot you set aside) to create the creamy consistency we’re looking for. Mix well and ensure you’re using enough water. It will absorb once you add the pasta don’t worry if you add to much.
Step 8
Add pasta to peas. Again, add boiled salt water as needed to ensure pasta is well submerged. This is necessary in order to cook pasta. No need to season yet as the water is salted.
Step 9
Make sure to watch your water levels this is a necessary step to make sure the pea mixture retains enough moisture and is creamy enough to cook the pasta. It’s a delicate balance of adding water and mixing the pasta and preventing any sticking to reaching that creamy consistency we want. Once you’re able to find the right balance between the creaminess of the sauce you desire and the necessary water you will need to cook the pasta. Maintain that balance and cook and mix pasta until tender.
Step 10
Once pasta is cooked. Check your seasoning and add salt and pepper. Mix well. Add parmigiano cheese and garnish will basil. I prefer no cheese and chilli instead. Enjoy
