Step 1
Chop bacon and cook. Once cooked remove from pan and set aside. Into bacon grease add onion and butter, cook until soft, and then add garlic. Cook until fragrant. Add 3 tbsp flour to make a roux then add your chicken stock, diced potatoes, milk, cream, salt, and pepper and bring to a boil. Once potatoes are fork tender mash with a potato masher and season to your liking. Add crumbled bacon, stir and serve. This makes 17 3 oz servings (perfect for bariatric Pureed stage) but of course your servings are up to you.
