Ingredients

1 x 16 ozorecchiette pasta
0.5 lbsalami slices
hard, cut into strips
0.25 lbassorted deli olives
pitted, drained, and cut in half
1 x 7 ozroasted red bell peppers
jar, drained and chopped
6pepperoncini salad peppers
cut in half lengthwise
0.5English cucumber
thinly sliced into half moons
1 ½ cupsGreek vinaigrette with feta cheese
bottled, divided
1 ptgrape tomatoes
cut in half
¼ cupfresh flat-leaf parsley leaves
firmly packed
4 ozfeta cheese
crumbled
Instructions
Step 1
Cook pasta according to package directions; drain.
Step 2
Rinse with cold running water.
Step 3
Toss together pasta, salami, and next 4 ingredients.
Step 4
Add 1 cup vinaigrette, and toss to coat.
Step 5
Cover and chill 2 to 24 hours.
Step 6
Toss in tomatoes, parsley, and remaining .5 cup vinaigrette just before serving.
Step 7
Sprinkle with feta cheese.
