Irish Stew
I was reading a novel set in Ireland last St Patrick's day (2020)) so I made this stew. The brown sauce is the secret ingredient that makes it special.

Ingredients

2 lbslamb stew
meat, or lamb shoulder cut into cubes

2potatoes
large

2parsnips

4carrots

4celery sticks

1onion
large

5cloves garlic

3 cupsbeef stock

1 bottlestout

2bay leaves

4 sprigsfresh thyme

2 Tbspbrown sauce

1can tomato sauce
small

salt

pepper

plain flour

olive oil
Instructions
Step 1
Coat lamb meat with flour and sauté in batches in olive oil until brown. Set aside on paper towels to drain off oil.
Step 2
Sauté garlic until golden brown. Add garlic and sauté 1 minute.
Step 3
Chop vegetables into bite size pieces.
Step 4
Place meat and vegetables in crock pot. Add Guinness and beef stock until barely covered.
Step 5
Add brown sauce, tomato sauce and herbs. Add salt and pepper to taste.
Step 6
Cook in crock pot until vegetables are almost soft.
Step 7
Melt butter in small pan. Stir in flour and cook for a minute or two. Slowly add a bit of beef stock, stirring until smooth.
Step 8
Add roux to crock pot during last 30 minutes.
Step 9
Add frozen peas and heat until warmed. Serve with Irish Soda Bread and Guinness beer.
