Instructions

Step 1
Heat the oil in a skillet over medium heat.
Step 2
Season the chicken with salt, pepper, and oregano and saute about 6-8 minutes each side, or until done.

Remove chicken.
Step 4
Introduce butter to the same skillet and allow to melt. Saute the garlic in the butter until fragrant, being careful not to burn.

Next, toss tomatoes into the skillet. Season with salt and pepper and cook until the tomatoes release their juices.

Next, add spinach and saute until just wilted.
Step 7
Pour in the heavy cream and sprinkle the parmesan cheese. Simmer until sauce thickens a bit, about 3 minutes.
Step 8
Return chicken to skillet, and cook another 5 minutes.
Step 9
Serve with a squeeze of fresh lemon juice.
