Wanna El Paso up?! This super easy and authentically (no melted cheese in sight) delicious Discada (food made on a disc) will leave your Taco Tuesday crowd begging for more! Best part is, you can make this your own by adjusting the ingredients "a tu gusto" (to your liking). Make it inside on a skillet or on a disco outside, it's up to you, estan en su casa.

Instructions

Step 1
Heat oil in a larger skillet over medium heat. Add bacon and cook until it begins to render.
Step 2
Add onion and cook until soft then add chorizo, breaking it up with a wooden spoon until chorizo starts to darken.
Step 3
Add ground beef, add salt and pepper, mix it all well and brown the beef. Toss in your jalapeños and hot dogs.
Step 4
Once jalapeños have softened and all meat is 90% done, add tomatoes and cook, continuing to mix the discada with your wooden spoon.
Step 5
Move all of your discada to the inside of your skillet and place 4 tortillas along the outer edges of skillet to heat. Flip and heat until both sides are nice and hot and have some of that discada grease on them. Repeat with all tortillas. While you're heating up the others make an order of tacos (4). Serve them hot.
Step 6
Top with salsa roja (red salsa) and enjoy! Have an ice cold Modelo lager or Fresca soda to take it next level.
