The Best Meal Prep Chipotle Beef Burritos

These meal prep chipotle beef burritos come together quickly and can be refrigerated for three or four days. We reheat ours in our air fryer, and they taste just as good as they do fresh! Great for meal prep, and they're totally customizable--if you don't like something that's in ours, just leave it out and add whatever you like.

Ingredients

1 tablespoonoil
we use avocado oil
0.5white onion
or yellow, diced
1 poundground beef
we use 93% lean
4 ouncescanned chopped green chiles
0.5 x 14.5 ouncecan diced tomatoes
1 ½ teaspoonscumin
½ teaspoonchili powder
¼ teaspoonground cayenne
½ teaspoongarlic powder
½ teaspoonsalt
1 cupcherry tomatoes
or grape, diced
0.5onion
diced
1jalapeno
diced, seeds and membrane removed
¼ cupcilantro
chopped
¼ teaspoonsalt
2juice of limes
½ cupsour cream
or greek yogurt
1 ½ teaspoonsmayonnaise
0.5juice of lime
⅛ teaspoonsalt
2chipotles in adobo sauce
+ 1 tablespoon sauce
1 ½ cupsshredded cheddar cheese

Instructions
Step 1
Heat oil in a pan over medium heat and add onion. Cook for a couple of minutes, then add ground beef, breaking it up as it cooks, and and cook until it's cooked through, about ten minutes. Then add canned tomatoes, canned green chilis, cumin, chili powder, ground cayenne, garlic powder, and salt, and cook for another two or three minutes, allowing the flavors to combine and the tomato juice to reduce down a bit.
Step 2
To make the pico de gallo, combine diced grape or cherry tomatoes, diced onion, diced jalapeno, chopped cilantro, salt, and the juice of two limes. Set aside.
Step 3
To make the chipotle sauce, combine sour cream, mayonnaise, chipotles in adobo sauce, salt, and the juice of a lime in a food processor and process until smooth. Set aside.
Step 4
To compile the burritos, add the following to each tortilla:1 tablespoon sour cream1 tablespoon chipotle sauce1/2 cup ground beef1/4 cup shredded cheddar cheese1/4 cup pico de gallo
Step 5
Sear the bottom of the burritos in a dry pan over medium heat (and the sides if you'd like!) to seal them up. We do it for about 30 seconds, but check them to make sure they're not burning every ten seconds or so--the pan gets hotter as you go.
Step 6
Enjoy! We like to serve them with extra chipotle sauce for dipping.
