Instructions
Step 1
Oven 400. In lg. bowl, combine water and baking soda. Add beef and mix thoroughly. Set aside.
Step 2
Heat 1 Tbsp oil in skillet. Add onion and cook until softened. Add chili powder, paprika, cumin, garlic powder, and 1 tsp salt. Cook until fragrant, approximately 1 min. Stir in tomato paste and cook until rust colored.
Step 3
Add beef and cook until no longer pink. Transfer to a bowl and stir in cheese. Wipe skillet with a paper towel.
Step 4
Brush both sides of tortillas with 2 Tbsp oil. Arrange in 2 rows on a baking sheet and bake 5 min. Reduce oven to 200.
Step 5
Fill tortillas with 2 Tbsp filling. Fold and press closed. Line a wire rack with paper towels. Heat ¼ cup oil in skillet. Fry tacos 2-3 min per side, 4 at a time. Blot oil from top of tacos and hold in warm oven while frying remainder. Fill with desired toppings.
