1. Chop zucchini into small pieces.
2. Stir fry ground beef ~7 minutes on medium heat, or until cooked through. Add in zucchini for the last 3 minutes. Drain away any excess liquid.
3. Mix in tomatoes, ricotta, and seasonings. Let all contents heat through.
4. Top with mozzarella.
5. Set oven to broil, and bake for 3 minutes.
6. No red meat? Use ground turkey or beans.
