Step 1
Chop carrots and celery, then add to a large pot with the broth. Bring to a boil for 3-5 minutes and reduce heat. Cook your rice and add to the pot. Remove as much meat from rotisserie chicken as possible and dice into small bites. Make sure to avoid bones. You can also use two large chicken breasts instead of the rotisserie, just season and cook them in the oven, then shred. Once the vegetables are softened, add the chicken and stir until warmed. Note: add any seasonings you want to this. I add diced garlic, garlic powder, onion powder, salt, pepper, paprika, and chicken seasoning.
