I found a microwave recipe years ago but modified it through trial and error to make it. Unfortunately, I am unable to find the original recipe

Step 1
Whisk the eggs well. Make sure you use room temperature eggs (I soak cold eggs under room temperature water for 20 mins before use)

Add in the sugar and hand whisk for 10 mins.

Add in the pandan leaves and continue whisking for a couple more mins.

Finally, add in the coconut milk, whisk to mix well.

Then microwave on high (I used power 8) for 2 mins.

After 2 mins, you will notice that the kaya is thickening. Take it out to whisk/ stir well to get rid of lumps.

Then continue to microwave it for 1 min each time (in my case, power 7) for 6 more times, stirring/ whisking well in between.

In the meaning, mix the extra 50 g sugar + corn syrup together with the hot water. If you do not have corn syrup, just add the hot water to make it a sugar paste before microwaving it
Step 9
After the sugar paste is prepared, microwave on high for 2 mins. This is the tricky part as u need the sugar to boil and reach caramelizing point.. however, u need to keep a close eye on it as it burns easily.
Step 10
Immediately add sugar to jam mixture. Note: as you pour in the sugar, the kaya will sizzle. Make sure you stir it quickly, otherwise there may be sugary lumps.

Spread generously on bread or toast and enjoy. Store excess in fridge
