Instructions

Step 1
Cup up the bell pepper and onion into 1" squares. Cut the tomatoes in half.
Step 2
Season the vegetables with a tablespoon of olive oil, 1 teaspoon black pepper, garlic powder, onion powder, and dried oregano. Mix well.
Step 3
Add the vegetables to the air fryer at 400 F for 10 minutes. Flip halfway.
Step 4
While the vegetables are cooking, dice the chicken breasts into bite size pieces.
Step 5
Toss the chicken in 1 tablespoon olive oil. Add Greek seasoning and 1 teaspoon black pepper. Mix well.
Step 6
Air fry the chicken on 400 F for 8 minutes, flip halfway.
Step 7
Combine the chicken and vegetables and broil for 5 minutes.
Step 8
Top with parmesan cheese, lemon juice, and rice.
