Step 1
Roast cubed squash with chopped sage for 20-25 mins Add while sage for last 5 mins
Step 2
Fry chopped onion for 10-12 mins.
Step 3
Add garlic and fry for 1 min
Step 4
Boil gnocchi. Drain. Reserve 100ml water
Step 5
Blend onions with 50ml water, half squash and all milk. Return to frying pan.
Step 6
Bring to simmer. Stir in cheese. Add more water if needed.
Step 7
Fold gnocchi through. Serve with remaining squash and crispy sage leaves and rocket
