Instructions

Step 1
Cut squash in half Drizzle with oil Salt & pepper Sprinkle chopped onion Sprinkle on chilli flakes Bake for 40 mins ish Check softness should be nearly cooked Drain chickpeas, coat lightly in oil and paprika Drizzle chickpeas over butter nut squash Bake for another 10 to 15
Step 2
Chop potatoes into bite size pieces Put in bowl and lightly cover with oil, add flavours such as smoked paprika or garlic powder Thin out pesto with oil and vinegar
Step 3
Remove squash from oven and place on serving plates
Step 4
Drizzle pesto over and also yogurt
