Stuffed fried masala okra

Ingredients

500gokra

1tomato
medium

1onion
medium

1 spoonginger garlic paste

3 Tbspoil

½ tspcumin seeds

½ tspmustard seeds

Hing
to taste

Step 1

Chop onion, tomato, corriander, and green chillies. If you don't have pre-made ginger garlic paste, finely chop some ginger and garlic and mix together.
Step 2

In a bowl, mix dhaniya (corriander) powder, jeera (cumin) powder, haldi (turmeric), red chilli powder, groundnut powder, anardaana (pomegranate seed powder), amchur powder (dry mango powder), garam masala, white sesame seeds, chaat masala, besan (chickpea flour), rice flour, salt, sugar, oil, onion garlic masala, and ginger garlic paste.

Step 3

Make half slits in okra, and stuff the masala in the okra. Add 1 tsp oil and cover with a lid.

Step 4

Let it marinate for 30 mins to 1 hour.

In a pan, add oil, mustard seeds, cumin seeds, and hing.




Step 6

Add the chopped onions and fry till the onions become translucent.

Step 7

Add the chopped tomatoes and fry for another minute.

Step 8

Add a pinch of turmeric and red chilli powder and mix well. Adjust for salt and sugar, if needed.

Step 9

Add the marinated okra and fry well. Place a lid on top and keep stirring in between till the okra is fully cooked.

Step 10

Garnish with coriander and serve hot with rotis.
