sweet & sour tofu, “egg” fried rice and broccoli (vegan)
a delicious and simple sweet and sour tofu and eggy-tasting fried rice. perfect for luck boxes! (egg fried rice can also be done with a store bought egg replacement for simplicity and time, simply fry your egg replacement and add your rice!)

Step 1
marinate pressed tofu in veg stock, garlic powder, salt pepper and some nooch for at least 15 minutes or overnight

mix ketchup, maple syrup, lemon juice and soy sauce and add some cornstarch mixed with water

Step 3
once tofu is marinated break into chunks with your hands or cut into cubes
Step 4
coat in some more cornstarch and pan fry the tofu in sesame oil for a few minutes before adding the sauce

steam or boil vegetables and season with some salt and pepper to taste when cooked

mix the chickpea flour with about 2/3 cups of water, with nutritional yeast, black salt and some garlic powder

fry with some sesame oil until its firm and then break up into chunks with a spoon
