Instructions
Step 1
Make the mise en place!
Chop the onions, the garlic and the parsley.
Mix the eggs.
Boil and shred the cod.
Step 2
Make the sofrito!
Sweat the onions in a pot with olive oil. Once they are sweating, put the garlic.
Step 3
Reduce the heat, put the cod in the pot and stir well.
Step 4
Mix in the shoetring potatoes, the parsley and the eggs and stir until you get a creamy texture from the eggs. Enjoy!
