Step 1
Step 1 Preheat the grill to high, lay the mushrooms on a baking tray and season with salt and pepper.

Grill for 7-8 minutes until softened then cut into thick slices.

Step 2 Whisk together the eggs, egg whites, protein powder, grated cheese, chives and a pinch of salt and pepper.

Heat the oil in a frying pan, pour in the egg mixture and cook gently, pulling the sides of the mixture in from the edges of the pan.

When the omelette is nearly set, scatter over the mushrooms in an even layer.

Carefully fold the omelette in half then slide onto a plate.
