For the Streusel Topping
Instructions
Step 1
Make the streusel by mixing all the ingredients with a fork and set aside.
Step 2
Heat the oven at 170 C Fan. Prepare the muffin tins with muffin cases.
Step 3
In a large bowl, put all the wet ingredients - eggs, buttermilk, oil and butter and whisk them together until well combined.
Step 4
In a separate bowl mix all the dry ingredients - plain flour, caster sugar, soft brown sugar, baking powder, lemon zest and blueberries until well combined.
Step 5
Now add all the dry ingredients to the wet ingredients and mix well but do not over mix.
Step 6
Then pour the mixture into prepared muffin tins and sprinkle the streusel mix over the batter. Bake in the oven for 35-40 mins.
Step 7
Leave in the tin to cool for 10 mins before taking them out.
