Step 1
Peel the Zucchini into long strips, cook some chicken and the spices and enchilada sauce, stuff the chicken into the zucchini slices, roll them up repeat as many as you like. Add them to a baking dish, add some enchilada sauce on top with the cheese, bake in the oven at 350 degrees for 20min till there nice and golden.
