Step 1
Put a little olive oil in a small pan heat to medium. Beat 3 large eggs and add a pinch if salt and pepper then mix and add to pan. Let cook for 2-3 minutes pulling away edges to cook all but the center. While cooking chop mushrooms, onions and bell peppers then sear with a teaspoon of minced garlic and rosemary in a seperate pan with olive oil for 3 minutes. Then add spinach and add to egg. Then coat with cheese, fold over and let sit under a lid for 2 minutes. Then eat.
