Step 1
Sweat the diced red onion in 1 tbsp of olive oil. Add a drained tin of chickpeas and the spice mix to the same pan and warm through for 3-4 minutes. Set aside.
Step 2
To make the mango salsa, prepare the mango by removing the soft flesh and cutting it into a small dice. Dress in the sriracha, juice of one lime and a little salt.
Step 3
Warm the tacos in a dry and hot pan for 15 seconds on either side. To serve, add a few thin slices of avocado, some spoons of the chickpea mix and a scattering of the mango salsa.
