Step 1
Heat the oil over a medium heat. Fry the garlic and chilli for 2 minutes, then add the chorizo slices and cook for 5 minutes, turning now and again, until caramelising.
Step 2
Add the pepper mushrooms and tomatoes, cook for another 5 minutes to soften.
Step 3
Stir in the chilli flakes and spinach, to wilt, then add the pesto. Once ready, add the cooked pasta to the pan and mix everything well before serving, topped with some chopped coriander.
