Ingredients

1.5 lbground beef
1 Tbspwhole-grain mustard
1 Tbspworcestershire sauce
1 tspsalt
1 tsppepper
1egg
large, lightly beaten
2 Tbspoil
8 ozsliced mushrooms
1red onion
thinly sliced
2 Tbsptomato paste
1 Tbspfresh thyme
chopped
1 Tbspcorn starch
3 cupsbeef broth
2 Tbsp reserved

Instructions
Step 1
Preheat the oven to 350. Warm 2 Tbsp of on very low heat in a large skillet.
Step 2
Mix together beef, mustard, Worcestershire, salt, and pepper in a large bowl.
Step 3
Add egg, and mix well to combine. Make 4 - 6 patties, depending on how big you want them.
Step 4
Raise the heat to medium or medium high and brown the patties in your skillet on both sides.
Step 5
Transfer the patties to a baking dish and continue to cook for 20 to 30 minutes or until centers are no longer pink and the internal temperature measures 160.
Step 6
Add more oil to the skillet and turn to medium high. Quickly brown the mushrooms on high heat (too low and they will just release water - they should squeak as you move them around) for a few minutes.
Step 7
Add sliced onions to the mushrooms and cook until translucent.
Step 8
At this point, or earlier, it may prove necessary to deglaze the pan. You can pour in a small amount of your beef broth or, optionally, use a 1/4 cup of red wine. Scrape up all the browned bits.
Step 9
Stir in tomato paste and thyme.
Step 10
Reserve 2 Tbsp of broth in a small jar or bowl and add the rest to the skillet. (Optionally add a tbsp of Worcestershire to the sauce as well.) Turn down heat and simmer while the patties cook.
Step 11
As the patties finish up, turn the heat up to medium high on the mushroom mixture. Add 1 tbsp cornstarch to your jar of reserved broth. Shake well to combine. (Or mix together in your small bowl.)
Step 12
Slowly pour the cornstarch mixture into the sauce, whisking or stirring quickly until combined. Allow to bubble then reduce heat so it doesn't bubble over.
Step 13
Remove patties from the oven and rest while the sauce simmers for about 5 minutes, to thicken into a gravy. Serve the gravy over the patties. (It's great on potatoes as a side, as well!)
