Ingredients
4 servings
300gchicken breast mini fillets
1 knobfresh ginger
6 clovesgarlic
1 packbutton mushrooms
1red pepper
1onion
1 packetmedium egg noodles
any noodles will work
spring onion
chopped
0.5tin of coconut milk
1fresh chilli
optional
1juice of lime
1 tablespooncurry powder
1 tablespoonsoy sauce
3 tablespoonshoney
3 tablespoonspeanut butter
Instructions
Step 1
Cook chicken seasoned with salt and pepper
Step 2
Once almost cooked, lower temperature and add garlic and ginger
Step 3
Meanwhile make satay sauce by combining 1 tbsp curry powder, 3 tbsp soy sauce, 3 tbsp peanut butter, 3 tbsp of honey and half a tin of coconut milk
Step 4
Add mushrooms and red pepper into pan with chicken
Step 5
When veg is tender, add spring onions
Step 6
Meanwhile add noodles to boiling water and cook as per instructioms
Step 7
Add sauce and some chillies to the chicken pan and simmer until noodles are cooked
Step 8
Transfer cooked noodles to main pan
