Instructions
Step 1
In a food processor, add the flour, baking soda and cinnamon and pulse a few times until combined
Step 2
Add the sugars, 2tbsp of coconut oil, vanilla extract and honey and mix until resembling wet sand
Step 3
Preheat the oven to 180°C. Transfer to a bowl and mix in the yoghurt until the dough is almost sticky (add more yoghurt if necessary to reach the right consistency)
Step 4
Roll out the dough between two sheets of parchment paper until about 3-5mm thick. Lift the top sheet and with a pizza cutter or a very sharp knife cut vertically and horizontally to make small rectangles.
Step 5
In a pot, melt 1tbsp of coconut oil with some brown sugar and cinnamon. Brush this mixture on top of the cut dough before putting in the oven.
Step 6
Bake for about 15 minutes but keep checking as it cooks, because it will depend on the thickness of your dough
Step 7
Remove from the oven and let cool on the over tray until fully cooled, before snapping the rectangles off and serving. This keeps for 4-5 days
